But then, Rodolphe Lindt forgot to turn off the conching machine in his small confectionary in Zurich one Friday evening, and it ran and and stirred the chocolate all weekend. The result was a much creamier, melty and delicious chocolate. Lindt's discovery of the conching process made Swiss chocolates internationally famous and Lindt still stands for those high quality standards today.
