The wheat flour type 550 by Diamant is a strong flour for all yeast doughs and mixed wheat breads and has a higher protein content than the classic flour type 405. The higher protein content helps, that the doughs can be better kneaded and formed. This flour is excellent for sweet and piquant yeast pastries, mixed wheat breads, shortcrust pastries, strudel, stollen, pizza and tarte flambées.
