Dr. Oetker Lemon Muffins

The perfect little treat for all lemon lovers. The muffins are exceptionally juicy and airy. The fresh lemon flavor can be enhanced with extra lemon glaze. The muffin cups are included which makes this a recipe which is quick and easy to prepare.

BASIC INSTRUCTIONS: Cookie sheet, 1/3cup milk, 2 eggs, 1/2 cup canola oil, 2Tbs hot water

• adjust oven rack to lower third position; preheat oven to 355F; separate the muffin cups and set them on the cookie sheet;
• in a medium size bowl combine the cake mix (Backmischung), oil, eggs & milk and beat on medium speed until a smooth batter is forming, using a handheld mixer with the beater attachments; evenly distribute the cake batter into the prepared muffin cups;
• bake for 20 minutes; remove muffins from oven and set on a wire rack;
• in a small bowl combine glaze mix (Glasurmischung) with the hot water and stir with a spoon until it resembles a thick paste; evenly distribute the glaze mix onto the cupcakes, using a pastry brush or the back of a teaspoon; allow glaze to set and harden before serving the muffins
