The Ostmann Potash, also known as potassium carbonate, is used as raising agent with a very unique and characteristic taste. It is commonly used to loosen up doughs with a very high sugar content such as honey cakes, Elisen/Nuremberg gingerbread and printe. This type of dough is often left to rest for a few hours or even days during which time the potash is used to achieve the desired texture.
How to use: In general, a heaped tablespoon (10g) is enough for 2 cups (500g) of flour. Always dissolve in some lukewarm water before using.
Store in a cool and dry place.
